Usually I'm tricked into paying attention to these long-time entries on our menus by some recent academic article, writing about foods such as jerky, chocolate, or garum, the early source of mono-sodium glutamate illustrated above. Yum!

Love this subject…it brings to mind stories of the cuisine of the inuit, and how olives must have been discovered to be edible…and countless other foods that are improbable if you think about it. cheers.
